Why is deciding what to cook for the week so exhausting? For whatever reason, I find myself stressed out every Sunday night, trying to meal plan and figure out what will be suitable for my husband and all three children to eat. This chore feels like a confusing math equation half of the time and usually results in one (or two) kids having chicken nuggets instead of what I have prepared. (Not even all three of my kids will eat spaghetti for crying out loud). With that being said, these recipes are tried and true for me and even if everyone doesn’t eat it, they are enjoyed by the majority of the house.

This recipe turned out to be the perfect Monday night dinner recipe as the weather started to turn chilly here in Illinois. I came across this on TikTok and was thankful I saved it while scrolling late into the night. A one-pot meal is where it’s at for a busy weekday!

The Mississippi Pot Roast is one recipe that the entire family will all actually eat. My favorite is to serve it with some instant mashed potatoes (or real if you have the time and energy) and some green beans smothered in butter and brown sugar. Bonus points for this cooking in the slow cooker all day and taking minimal effort.
Biscuits and Gravy Casserole with Sausage and Eggs – By Scattered Thoughts of a Crafty Mom
When my husband has to work late and miss dinner with us, I always prepare breakfast for dinner. He has never been a huge fan of this idea so I save recipes like this one for nights he isn’t joining us at the dinner table. I was concerned about the “soggy factor” of the biscuits but was pleasantly surprised with how this one turned out! The leftovers were also delicious and we were even able to enjoy this casserole throughout the week.

The awesome part of this recipe is you can customize it however you choose! Switch up the cheese and toppings to make it your own. I especially enjoyed the Big Mac sauce but my youngest children said it was delicious without.
One-Pot Red Beans and Rice – Southern Bite
Ok, I know getting kids on board with this dish is not the easiest of tasks BUT this recipe is delicious and finds itself on my menu more often than not! If you prefer less heat, feel free to substitute with smoked sausage. All around though, I love this dish and even enjoy it as a leftover.
Garlic Butter Herb Steak Bites with Potatoes | The Recipe Critic
Generally, I leave the steak dinners up to the grill, but this recipe has proven itself on the stovetop time and time again. If you own a cast iron skillet, I would recommend busting it out, but whatever you have in your cabinet will work. This dish also gets a 10/10 for everyone eating it as well.
